Spaghetti Squash "Noodle" Recipe - LC, GF, SF, KETO

Got sucked into a Tiky Tok worm hole the other night and came across Low Carb Spaghetti Squash.  I had tried to make this once before a few years ago and it was horrible!  

Clearly, a few years ago I didn't complete the recipe right because this go around taste was bomb.com and super easy!  Literally 40 minutes total and I made 3 different "pasta's"  (husband has Celiac so must be gluten free - side note:  I could have given him some delicious Spaghetti Squash but was afraid it wouldn't come out right.  The kiddo's had regular pasta - while we do limit the amount of carbs the kids consume (mostly sugar carbs - NO CANDY, NO ICE CREAM and definitely NO SODA) we do a pasta night once every two weeks or so.  Lastly, my pasta - aka spaghetti squash.  

Super easy recipe - cut spaghetti squash down the middle long ways, remove the seeds.  They reminded me of pumpkin seeds (I kept the seeds to plant them in the garden.  Check out BLOG POST of reseeding Spaghetti Squash - again super easy!)  Season as preferred (I kept it simple:  Sea Salt, Pepper & Complete season with a drizzle of olive oil).  Cover with aluminum foil face down on pan and bake at 400 for 20 minutes.

After tossing the squash in the oven, I started the sauce - I used Simply Ragu (no sugar added), depending on your carb intake there are other options out there for sauce.  Carb count was 13g with 7g of Sugar - tomato's have natural sugar in them, so for our lifestyle it works plus everyone enjoys it!  Husband also wants the MEAT - lol, so I added fully cooked Gluten Free Member's Mark Meat Balls.  Set that on simmer to warm up and ran outside to tend to our Chicky Babies (check out Blog updates "Life on our Farm" to see how those babies are doing!)


Back to dinner - once the Squash is done, let it rest (it's gonna be so hot trying to hold the squash to scrap out your spaghetti will burn your fingers!).

Alright - spaghetti is ready, now time to eat!  I didn't forget the rest of the fam, boiled 2 pots of water for their spaghetti's and garlic toast for everyone.  Kids eat the Nature's Own Keto Bread - this one is a bit to much carbs for me, however only 40 Calories per slice.  For my toast, I choose Sola Bread from Walmart.  Other options Wholesome Keto Treats makes an amazing bread that can be found here, this is an almond flour base bread - toast just like the real stuff and only 2.6 net carbs per slice!  

Spaghetti Squash "Noodle" Recipe 

1 Spaghetti Squash 

1 tsp Sea Salt

1 tsp Pepper

1 tsp Garlic

Drizzle Olive Oil

Set oven to 400 degrees for 20-30 minutes.
