Chicken & Broccoli Alfredo (Keto, GF, SF, LC)
Another SUPER easy throw together dinner that everyone is sure to LOVE (Keto, GF, SF, LC)! I was also able to put this together in 1 pan so easy peasy clean up (I didn't use noodles for this meal - recommendation for this would be Natural Heaven's Hearts of Palm Noodles, either Angel Hair or Spaghetti. For this recipe I used Bertolli's Alfredo Sauce (super easy to make your own!)- I did spice it up with a bit of Badia Complete Seasoning, Sea Salt & Pepper.
Let's get dinner started! I am a crazy person about fat and fatty pieces so I trimmed the chicken and diced it into bite size pieces (this also helps speedy up the cooking process!) After your chicken is diced & trimmed toss it into your pan with Olive Oil (you want a pan big enough to hold everything - this is a family favorite recipe so I make enough for left overs and use my giant wok.) Cook your chicken until done (only about 5-7 minutes, depending on size of pieces).
Once done, I removed the chicken and set in bowl while I prepared the Broccoli - I enjoy a slightly crispier broccoli where the hubby likes soft broccoli, I do try to accommodate both of us lol! I also prefer fresh broccoli (roughly 6 heads) but in a time crunch I will use fresh broccoli florets pre cut. The broccoli is sautéed in 1 stick unsalted butter, 2 tablespoons Complete Seasoning and 1/2 cup water on medium - high heat. Once broccoli is done I added the cook chicken back into the pan and both jars of Alfredo Sauce. Let simmer 5-7 minutes.
Right before serving I add CHEESE... whatever cheese I have on hand, fresh parmesan was the choice tonight!
YUMMY & so easy! For the kiddo's they did get Veggie Noodles (not their favorite but they will eat it with Alfredo Chicken <3 and husband tried the Aldi's Brand of Gluten Free Fettucine Noodles.

2 Jars Bertolli Alfredo Sauce
1 Package boneless, skinless Chicken Tenderloin
1 tbsp Pepper
1 tbsp salt
1 tbsp Minced Fresh Garlic
2 tbsp Badia Complete Seasoning
6 heads fresh broccoli
Drizzle Olive Oil
